Amaranth Cheese "Grits"

Cheese grits are one of the great southern comfort foods. Naturally, we're putting a whole-grain twist on this dreamy classic.


1 C Organic Grains Whole Amaranth

3 C Water

salt, to taste

1 C sharp cheddar, shredded (sub non-dairy if making vegan)

3 Tbsp cream cheese (sub non-dairy if making vegan)


1. Combine the water and salt in a large pot and cover with lid

2. Bring to a boil

3. Add Organic Grains Amaranth, cover pot and reduce burner to its lowest setting

4. Simmer 20 mins, or until water is completely absorbed

6. Turn off heat, add in the cream cheese and cheese

7. Stir well until melted

8. Serve and enjoy!

Optional Toppings:

  • Sausage (meat or veggie)

  • Sweet & spicy green apple salsa

  • Red pepper flakes

  • Broccoli or other steamed veggies

  • Grilled shrimp
