Caramel Chia Tapioca Pudding

Chia seeds will naturally have a texture like tapioca when combined with liquid. Because of their natural ability to absorb immense amounts of liquid, they are an outstanding addition to your diet when coupled with water, to maintain hydration during physical exertion.


They're perfect for a whole-foods pudding that will satisfy your sweet tooth and keep you full! 


Yield: 4 servings


Ingredients:

1/2 C coconut sugar, divided

1 C almond milk, hot

1/4 tsp salt

1 tsp cinnamon

Pinch of nutmeg

1 C coconut milk, chilled overnight*

1 tsp vanilla

1 C fresh berries


Instructions:

1. Mix chia seeds, salt, cinnamon, and nutmeg in a medium-sized bowl

2. Pour warm almond milk over the chia seed mixture allowing it to thicken, stirring every few minutes

3. Add half of the coconut sugar (1/4 C) to the chia seed mixture

4. In a cold bowl, combine the remaining coconut sugar, vanilla and coconut milk, whipping until the cream is stiff and forms peaks

5. Divide the chia seed mixture between 4 serving cups, top with fruit and whipped cream

6. Enjoy! 


*Only use the solid part of the coconut milk, store the liquid in the refrigerator and use later for a smoothie
