This rustic berry tart is not only a gourmet dessert, it's actually a lot easier to make than a more traditional fruit tart. With just a few delicious ingredients, this tart is satisfying without being cloyingly sweet.
Ingredients:
1 tsp salt
1/2 C coconut oil
1/4 C cold water
4 C organic fruit (fresh or frozen)*
1/2 C sugar (can also use Stevia for a lower-calorie version)
3 Tbsp cornstarch
1/2 C organic fresh berries, to garnish
1/2 C chocolate chips
Instructions:
Yield: 1 tart || Time: 2 hours
1. In a large bowl, combine flour and salt
2. Add oil and water to the flour and salt, tossing with a fork until the mixture forms into a ball
3. Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour
4. In another bowl, combine the berries, sugar and cornstarch; let stand for 15 minutes
5. After the hour has elapsed, unwrap the dough and place on a parchment-lined baking sheet
6. Cover with waxed paper and roll the dough into a 14-inch circle, discard wax paper
7. Spoon in fruit/sugar/cornstarch mixture into the center of the dough leaving approximately 2 inches around the edges
8. Fold the edges of the dough over the fruit, leaving the center uncovered
9. Bake at 400° for 25-30 minutes or until the crust is golden brown and the filling is bubbly
10. While the tart is baking, place the chocolate chips in a double boiler until melted
11. Garnish the finished tart with fresh berries and a drizzle of the melted chocolate
12. Serve and enjoy!
*If using frozen fruit, measure while still frozen, then thaw completely. Drain in colander, but do not press liquid out.
