The Best Pumpkin Muffins


These muffins are quintessential autumn perfection. We love the comforting, cozy combination of pumpkin and chocolate. These muffins are not only filling, but they'll satisfy the sweet tooth so many of us get this time of year. Enjoy! 



Yield: About 2 dozen


Ingredients:

1 C water

1/4 C Organic Grains Chia Seeds, ground*

1 C coconut sugar

1 can pumpkin puree (15 oz)

1/2 C vegetable oil 

3 C Organic Grains AP Flour

2 tsp baking powder

2 tsp baking soda

2 tsp ground cinnamon

1/4 tsp nutmeg

3/4 tsp salt

2 C dark chocolate (we love Lily's


Instructions: 

1. Preheat oven to 400°F

2. In a large bowl, beat ground Organic Grains Chia Seeds and water together

3. Add in the coconut sugar, pumpkin puree and oil until smooth

4. In a separate large bowl, combine the Organic Grains AP Flour, baking soda, baking powder, spices and salt 

5. Gradually add the dry mixture into the wet, pumpkin mixture and blend well

6. Fold in chocolate chips

7. Fill greased or paper-lined muffin cups 3/4 full

8. Bake for 15-18 minutes until a toothpick comes out clean

9. Cool in the pan for 10 minutes before placing on a wire rack

*We used a coffee bean grinder - it works great!
