West African Peanut, Sweet Potato & Quinoa Stew

This recipe is super simple to make in a slow cooker for the busy bustle of the holiday season. It's warm and elegant served at any dinner party as a main dish, or as a flavorful appetizer.



Ingredients:


Stew ingredients:

1 can tomato sauce (28 oz.)

1/2 C chunky peanut butter (opt for no-sugar added like this brand)

1 T garlic, minced

1 T cumin, ground

1/2 t cinnamon

1/4 t smoked paprika

1 lb sweet potatoes, peeled and cut into 1-inch pieces

2 C vegetable stock


To top:

Chopped peanuts

Fresh cilantro, chopped

Bell pepper, minced

Seasoned chicken or jackfruit


Instructions:


1. Place all stew ingredients in a 5-quart slow cooker

2. Cook covered on high for 3-4 hours or on low for 6-8 hours

3. 20 minutes before serving, add the chicken or jackfruit

4. Top with cilantro, peanuts and bell peppers

5. Enjoy!
